Enhance standard 2LIS_17 extractors in an operative SAP R/3

Hi experts,

I need your help in a special activity that I need to do, I'm going to enhance the 2LIS_17_I3HDR to include some standard fields through LBWE transaction, the complication that I see in my future is activate the delta extraction, because the source system is operative and the plants works 7x24, what you recommend us to do this activity in the better way, preventing that some orders don't get lose in the extraction. 

How can I proceed to do this and have low impact?.
